INGREDIENTS

Cherry tomatoes - 1 punnet
Telegraph cucumber 1/2
Baby Spinach leaves - handful
Basil - handful
FastFx Cider & Mustard Vinaigrette - 2Tbs
Lemon - zested
Salt & Pepper
INSTRUCTIONS
Cut cherry tomatoes into half - or you can use 3 large tomatoes, cut into chunks.
Cut cucumber into chunks.
Combine cut vegetables with spinach leaves.
Mix through basil.
Drizzle over Cider & Mustard Vinaigrette.
Season with lemon zest, salt & pepper.
Serve immediately (or prepare vegetables in advance, adding Vinaigrette when ready to serve).
